1. How to exit from single app mode for an iOS device when Wi-Fi is disabled?

In the absence of a network connection, the only way to exit from the single app mode or kiosk mode is via the Apple Configurator. You can connect the iOS device in single app mode to a Mac which has Apple Configurator and then remove the profile.
